Veg Upma

Ingredients

  • Sooji – 1 cup
  • Mustard seeds – 1 teaspoon
  • Urad dal – 1 teaspoon
  • Chana dal – 1 teaspoon
  • Oil – 1½ tablespoons
  • Sprig curry leaves – 1
  • Dry red chilli – 1
  • Chopped tomatoes – ½ cup
  • Chopped green chillies – 2
  • Chopped onions – 1 cup
  • Chopped beans – ¼ cup
  • Chopped carrots – ⅓ cup
  • Green peas – ⅓ cup
  • Water – 3 cups
  • Sugar – ½ teaspoon
  • Salt – 1½ teaspoons
  • Coriander leaves – 2 tablespoons
  • Ghee – 1 tablespoon
  • Ginger – 1 tablespoon (optional)

Method

Roasting sooji:

1. Heat a kadhai on medium heat.

2. Add sooji.

3. Roast on low flame for 3–4 minutes till you get a nutty smell. Stir constantly to ensure even heating.

4. Turn off the flame.

5. Transfer the roasted sooji to a plate.

6. Allow it to cool.

Making upma:

7. Add oil to a kadhai over medium heat.

8. When hot, add mustard seeds and let them splutter.

9. Add chana dal and urad dal.

10. Fry till they just begin to turn brown.

11. Add dry red chilli and curry leaves.

12. Sauté on low heat.

13. Add onions, green chilli and ginger.

14. Sauté till the onions become translucent.

15. Add beans, carrot and green peas.

16. Sauté for 2 minutes. Stir continuously.

17. Add 3 cups of water, salt and sugar.

18. Let the water boil.

19. Then, reduce the flame to low.

20. Slowly transfer the roasted sooji into the water. Stir continuously.

21. Cover and steam on low heat for 3–4 minutes.

22. Add ghee and chopped coriander leaves.

23. Switch off the flame.

24. Serve.
