Lemon Rice

Ingredients

  • Cooked rice – 2 cups
  • Chana dal – 1 teaspoon
  • Lemon juice – 2 tablespoons
  • Peanuts – 2 tablespoons
  • Mustard seeds – ½ teaspoon
  • Dry red chilli – 1 broken
  • Green chilli – 2 (slit lengthwise)
  • Turmeric powder – ¼ teaspoon
  • Chopped ginger – ¼ teaspoon
  • Coconut oil or any oil – 2 teaspoons
  • Salt – To taste
  • A few curry leaves

Method

1. Heat oil in a pan.

2. Add mustard seeds.

3. When the seeds start crackling, add curry leaves, chana dal, ginger, dry red chilli and green chilli.

4. Sauté the mixture for a minute.

5. Add peanuts.

6. Sauté till the peanuts turn golden.

7. Add turmeric powder, salt and lemon juice.

8. Turn off the flame.

9. Add cooked rice.

10. Mix well.

11. Cover for 1 hour.

12. Serve hot.
