Corn Pav Bhaji

Ingredients

  • Special pav bhaji buns
  • Pav-bhaji masala – 1 teaspoon
  • Lemon juice – 1 teaspoon
  • Butter – 2 tablespoons
  • A few coriander leaves
  • For Bhaji:
    • Ricotta cheese – 100 grams
    • Boiled corn – 200 grams
    • Tomatoes – 500 grams
    • Green chillies – 2
    • Pav-bhaji masala – 2½ teaspoons
    • Fenugreek (methi) – ½ cup
    • Red chilli powder – 2 teaspoons
    • Butter – 4 teaspoons
    • Bell pepper – 1
    • Salt – To taste
    • Lemon juice

Method

Pav:

1. Cut the bread into 1- to 2-inch thick pieces.

2. Roast them with coriander leaves, lemon juice, pav-bhaji masala and a little oil.

Bhaji:

3. Stir fry the chopped bell peppers for 2 minutes.

4. Add pav-bhaji masala, tomato puree, red chilli powder, lemon juice and salt.

5. Mix well for 2 minutes.

6. Add fenugreek and boiled corn.

7. Stir well.

8. Add ricotta cheese.

9. Serve with the pav on the side.
