Stuffed Sabudana Vada

Ingredients

  • Sabudana 1 cup
  • Boiled potatoes – 4
  • Water – 1 cup
  • Cumin seeds – 1 teaspoon
  • Finely chopped green chillies – 3
  • Roasted peanuts – ½ cup (crushed)
  • Finely chopped curry leaves – 8 to 10
  • Jeera powder – 1 teaspoon
  • Sugar – ½ teaspoon
  • Chopped coriander – 2 tablespoons
  • Chilli powder – ½ teaspoon
  • Lime juice – 1
  • Salt – 1¼ teaspoon
  • Oil – 2 cups (for frying)
  • Stuffing:
    • Paneer – 150 grams
    • Jeera powder –  ½ teaspoon
    • Chilli powder – ½ teaspoon
    • Chopped coriander – 1 tablespoon
    • Salt – ¼ teaspoon

Method

1. Wash the sabudana with water in a sieve.

2. In 1 cup water, soak the washed sabudana for 6–8 hours.

3. Mash the potatoes.

4. Add green chillies, curry leaves, peanuts, coriander, sugar, jeera powder, chilli powder, salt, lime juice and soaked sabudana.

5. Mix well.

6. Take paneer in another bowl.

7. Add chilli powder, jeera powder, coriander and salt to the paneer.

8. Mash the paneer mixture and mix it well.

9. Form small lime-sized balls from the paneer mixture.

10. Next, wet your palms with water.

11. Flatten a golf ball-sized sabudana mixture on your palm.

12. Put a ball of paneer mixture in the centre.

13. Press the sabudana mixture around the sides to cover the paneer ball from all sides, forming a sabudana vada.

14. Repeat Step 13 till all sabudana vadas are formed.

15. Fry in medium hot oil till the vadas are golden brown.

16. Serve immediately.
