Carrot and Cauliflower Pickle

Ingredients

  • Carrot – ½ kg
  • Cauliflower – ½ kg
  • Ginger – 100 grams
  • Jaggery – 150 grams
  • Mustard oil  – 2 to 3 tablespoons
  • Mustard seeds – 2 teaspoons
  • Turmeric – ¾ teaspoon
  • Salt – 2 teaspoons
  • Red chilli powder – 1 teaspoon
  • Garam masala – 1 teaspoon

Method

1. Cut carrot and cauliflower.

2. Cut the ginger in very small pieces.

3. Boil water and add salt to it.

4. Add cauliflower to the boiling water.

5. After 2 minutes, take out the cauliflower and add carrot in the same water.

6. After 1 minute, take the carrot out.

7. Let the boiled cauliflower and carrot dry in the sun on a muslin cloth.

8. Take a wok and pour oil in it.

9. Add ginger to the oil.

10. After some time, switch off the flame.

11. Add all the masalas (spices).

12. In another pan, take half a cup of water and add jaggery to it.

13. Make a thick syrup.

14. Add the syrup to the wok and and mix in the already added masalas.

15. Now add carrot and cauliflower to the masala mixture.

16. Store the whole mixture in the container.

17. Keep the container in the sun for 2 days and the pickle is ready!!
