Bhindi Masala

Ingredients

  • Bhindi – 400 grams
  • Mustard oil – 3 tablespoons
  • Finely chopped ginger – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Red chillies – 2
  • Diced green chillies –  1 to 2 (optional)
  • Diced onions – 1 cup
  • Chopped tomatoes – ½ cup
  • Coriander powder – 2 tablespoons
  • Kashmiri chilli powder – ½ teaspoon
  • Turmeric powder – ½ teaspoon
  • Amchoor – 1 teaspoon
  • Salt – 1 teaspoon
  • Freshly chopped coriander – 2 tablespoons

Method

1. Wash the bhindi well. Wipe it.

2. Cut the bhindi diagonally into 1-inch pieces.

3. Heat oil in a frying pan.

4. Add garlic and ginger.

5. Sauté for 30 seconds.

6. Add cumin seeds, red chillies and green chillies.

7. Cook for 30 seconds.

8. Add the onions.

9. Stir fry the onions on high heat.

10. Then, add the bhindi.

11. Cook while stirring occasionally on a medium flame for 3–4 minutes.

12. Add all the spices and tomatoes.

13. Stir fry till the bhindi is cooked.

14. Garnish with some fresh chopped coriander.

15. Serve hot.
