Matar Sooji ki Tikki

Ingredients

  • Semolina – ½ cup
  • Red chilli powder – 1 teaspoon
  • Salt – 1 teaspoon
  • Ginger paste – ½ teaspoon
  • Oil – For frying
  • For stuffing:
    • Boiled and mashed green peas – 1 cup
    • Ginger paste – ½ tsp
    • Cumin seeds – ½ tsp
    • Dry mango powder – 1 teaspoon
    • Finely chopped green chillies – 2
    • Salt – To taste

Method

Matar stuffing:

1. In a pan, heat oil.

2. Add cumin seeds.

3. When they start crackling, add the ginger paste.

4. Sauté.

5. Add the chopped green chillies.

6. Sauté.

7. Add the mashed green peas, red chilli powder, dry mango powder and salt.

8. Fry well.

9. Keep the mixture aside.

Rawa crust:

10. Boil 1 cup of water.

11. Add red chilli powder and ginger paste.

12. Mix well.

13. Slowly add sooji while stirring.

14. Mix well to avoid forming lumps.

15. Let the mixture sit for 10 minutes.

16. Add 1½ tablespoons of oil.

17. Knead it to a soft dough.

18. Divide the dough into eight portions.

19. Stuff each portion with the matar stuffing.

20. Form small balls of the portions with the stuffing in the centre.

21. Heat oil in a pan.

22. Fry the tikkis.

23. Serve hot with ketchup or chutney.
