Dal Fry (Dhaba Style)

Ingredients

  • Arhar dal (Tur dal) – 1 cup
  • Finely chopped tomatoes – 3
  • Turmeric powder ½ teaspoon
  • Salt – 1 teaspoon
  • Butter –2 tablespoons
  • Ghee – 1 tablespoon
  • Mustard seeds – ½  teaspoon
  • Cumin seeds – 1 teaspoon
  • Garlic cloves – 6 (smashed)
  • Curry leaves – 8 to 10
  • Green chillies – 2 (slit lengthwise)
  • Whole dried red chillies – 2
  • Chilli powder – ½ teaspoon
  • Chopped coriander – 2 tablespoons
  • Water – 3 + ½ cups
  • Lime juice – 1 (optional)

Method

1. Pressure cook the dal with turmeric, tomatoes, salt and 3 cups of water.

2. Cook till the dal can be mashed easily between two fingers.

3. Heat ghee and butter in a pan and add smashed garlic.

4. Stir fry on high flame for a minute till the garlic starts turning golden brown.

5. Reduce the heat and add cumin seeds, mustard seeds, green and red chillies and curry leaves.

6. Stir fry for another minute.

7. Add red chilli powder.

8. Stir the cooked dal along with ½ cup of water.

9. Bring the dal to a boil.

10. Simmer for five minutes.

11. Switch off the flame.

12. Stir in chopped coriander and lime juice (optional).

13. Serve hot.
