Coconut Pudding

Ingredients

  • Corn flour – 2½ teaspoons
  • Milk – 2½ cups
  • Sugar – ¾ cup
  • Malai – 1 tablespoon
  • Coconut powder – 2 cups
  • Cardamom – 2 to 3 (crushed)
  • Salt – 1 pinch
  • Red edible colour

Method

1. Keep half a cup of milk aside and boil 2 cups of milk.

2. Add corn flour to the half-cup of non-boiled milk.

3. Add the mixture to boiling milk.

4. Keep on stirring.

5. Add sugar, salt and cardamom powder.

6. Add malai and let the mixture boil for 2 minutes.

7. Add desiccated coconut.

8. Let the mixture cook for 2 more minutes.

9. Add colour.

10. Switch off the flame.

11. Let the mixture cool down.

12. Refrigerate it and serve chilled.
