Cheese Kofte in Spinach Sauce

Ingredients

  • Kofte:
    • Paneer – 175 grams
    • Cornflour powder – 2 teaspoons
    • Salt – 1 teaspoon
    • Baking soda – A pinch
    • Oil for frying
  • Spinach Sauce:
    • Cut spinach – 2 cups
    • Fresh curd – ¾ cup
    • Sugar – ½ teaspoon
    • Ghee – 2 tablespoons
  • Paste:
    • Grated coconut – 1 tablespoon
    • Cut cashews – 1 tablespoon
    • Poppy seeds – 1 tablespoon
    • Garlic pods – 4
    • Green chili – 4
    • Ginger – 1-inch piece
    • Fennel seeds – 1 teaspoon

Method

1. Boil spinach in water containing sugar.

2. Mash the above mixture.

3. Grind the ingredients of the paste in a mixture.

4. In a wok, add ghee and saute the ingredients of the paste in the ghee.

5. Add curd and keep on stirring.

6. Add the mashed spinach and salt to the above mixture.

7. Let it cook for 5–10 minutes.

8. Just before serving, add the kofte to the sauce and serve.
