Method
Fried noodles:
1. Boil the noodles with a teaspoon of oil and salt.
2. Immediately drain them and wash them thoroughly with cold water.
3. Spread out the washed noodles on parchment paper.
4. Let them dry for 30 minutes.
5. After 30 minutes, sprinkle the noodles with cornflour and toss them well.
6. Heat oil in a frying pan.
7. When the oil is hot enough, keep the heat to medium high.
8. Add a handful of noodles to the oil. Spread them out.
9. Deep fry for 2–3 minutes till the noodles are golden brown in colour.
10. Drain the fried noodles on some tissue paper.
11. Let them cool down completely before using.
12. Keep aside.
American chop suey sauce:
13. Heat oil in a wok.
14. Add garlic and ginger.
15. Stir fry for 30 seconds.
16. Add carrots, onions and capsicum.
17. Stir fry on high heat for 1–2 minutes till the onions are translucent.
18. Add cabbage and spring onions.
19. Stir fry for 1–2 minutes on high heat.
20. Add soy sauce, tomato sauce, black pepper powder, red chilli sauce and sugar.
21. Mix well.
22. Combine corn flour and water in a bowl. Add this mixture to the wok.
23. Add green chillies.
24. Continue stirring until the sauce thickens and comes to a boil.
25. Then, reduce the heat and simmer for 3–4 minutes.
26. Add lime juice.
27. Garnish with spring onion greens.
28. Pour on top of fried noodles.
29. Serve immediately.
