Asian Cauliflower Rice

Ingredients

  • Cauliflower florets – 3 cups
  • Vegetable oil – 1 tablespoon
  • Toasted sesame oil – ½ tablespoon
  • Minced garlic – 1 teaspoon
  • Finely chopped celery – 1 tablespoon
  • Diced bell peppers – ½ cup
  • Diced carrots – ½ cup
  • Diced zucchini – ½ cup
  • Soy sauce – 1 tablespoon
  • Oyster sauce – 2 tablespoons
  • Salt – To taste
  • Chopped sesame seeds and green onions – For garnishing

Method

1. Finely chop the cauliflower (rice-sized pieces). Make sure it doesn’t turn mushy.

2. Heat oil in a pan.

3. Stir fry garlic and celery.

4. Add the carrots, zucchini and bell peppers.

5. Stir fry for 2–3 minutes.

6. Add the oyster sauce, toasted sesame oil and soy sauce.

7. Mix well.

8. Add the cauliflower and salt (if required as there is salt in the sauces.)

9. Stir fry for 2–3 minutes till the cauliflower softens up.

10. Garnish with green onions and sesame seeds.

11. Serve immediately.
