Roasted Parmesan Crusted Cauliflower

Ingredients

  • Cauliflower – 1
  • Olive oil – 2½ tablespoons
  • Oil spray
  • Black pepper for sprinkling
  • Finely chopped parsley for garnishing
  • Crust:
    • Breadcrumbs –  2½ tablespoons
    • Grated parmesan – ½ cup
    • Dried oregano –  ½ teaspoon
    • Black pepper – ½ teaspoon
    • Paprika – ½ teaspoon

Method

1. Preheat the oven to 200 °C.

2. Mix the crust ingredients in a small bowl.

3. Break cauliflower into large florets and cut them in half such that each piece has a large flat surface area.

4. Line a baking tray with paper.

5. Drizzle the tray with oil.

6. Spread the oil all over the paper.

7. Evenly sprinkle the crust mixture all over the tray.

8. Place the cauliflower pieces on the crust mixture and press slightly (keep some space between the pieces; do not stick them).

9. Spray generously with oil.

10. Sprinkle black pepper (optional).

11. Bake for 20 minutes until the crust is deep golden.

12. Turn the cauliflower so the crust side is up.

13. Bake for another 5 minutes.

14. Garnish with finely chopped parsley or any other herb (optional).

15. Serve immediately.
