Vada Pav

Ingredients

  • Pav – 6
  • Besan – 1 cup
  • Potatoes – 4
  • Mustard seeds – 1 teaspoon
  • Chopped green chillis – 3
  • Whole green chillis – 10 to 12
  • Hing – 2 teaspoons
  • Lemon – 1
  • Amchur Powder – 1 teaspoon
  • Baking powder – ½ teaspoon
  • Baking soda – A pinch
  • Green chilli chutney – 1 cup
  • Dry garlic chutney – 1 cup
  • Gunpowder – 1 cup
  • Salt – To taste

Method

1. Boil the potatoes.

2. Peel and mash them.

3. Heat the oil.

4. Add chopped green chillis, mustard seeds, amchur powder, hing and turmeric.

5. Mix well.

6. After frying, add the mixture to the mashed potatoes.

7. Add lemon juice.

8. Mix well.

9. Divide the mixture into equal-sized balls.

10. Keep the balls on a plate.

11. In a bowl, mix besan, turmeric powder, red chilli powder, baking powder, baking soda and salt.

12. Mix well.

13. Add some water and prepare a batter for vadas. The batter should be thick enough to stick to the potato balls but thin enough to drip freely.

14. Heat the oil.

15. Put the potato balls in the batter.

16. When the oil is hot, fry the vadas till they are crispy.

17. Fry whole green chillis.

18. Take out the vadas.

19. Cut the pav into two.

20. Apply the green chilli chutney and dry garlic chutney on one half of a pav.

21. Place the vada on it.

22. Cover with the other half of the pav.

23. Serve with fried whole green chillis and gunpowder.
