Eggless Christmas Cake

Ingredients

  • Refined flower – 1 cup
  • Butter – ½ cup
  • Sugar – ½ cup
  • Baking powder – ½ teaspoon + ¼ teaspoon
  • Baking soda – ½ teaspoon + ⅛ teaspoon
  • Golden syrup or honey – ½ tablespoon
  • Curd – 3 tablespoons
  • Vanilla essence – ½ teaspoon + ¼ teaspoon
  • Mashed potato – ½ cup
  • Water – ½ cup
  • Spice mix (1 clove, 1 small cinnamon, 1 small nutmeg) – ½ tsp
  • Raisins, dry figs and tutti frutti – 50 grams each (all chopped)
  • Dates, almonds, pista and cashews – 25 grams each (all chopped)

Method

1. In a non-stick pan, add dry fruits, butter, honey, sugar and water.

2. Keep the pan on low flame until the mixture boils. Then, lower the flame.

3. Let the mixture boil for 20 minutes.

4. After 20 minutes, switch off the flame.

5. Add ⅛ teaspoon baking soda to the mixture.

6. The mixture will become frothy and will bubble up.

7. Set it aside and let it cool down.

8. Meanwhile, in a mixing bowl, add curd, vanilla, spice mix and cooled dry fruit mixture.

9. Add boiled and mashed potato.

10. Sieve refined flour, ½ teaspoon baking powder and ½ teaspoon baking soda twice.

11. Add the mixture to the wet ingredients slowly.

12. Keep the mixture in a preheated oven at 180 °C.

13. Bake for 1¼  hour.

14. Wait till the cake cools down.

15. Slice and serve.
