Raita (Lauki or Kachcha Papita)

Ingredients

  • Grated lauki or kachcha papita – 1 cup
  • Curd – 2 to 3 cups
  • Sugar – ¾ teaspoon
  • Coriander leaves (optional)
  • Raita masala:
    • Salt – 1 tablespoon
    • Roasted cumin seeds – 1 tablespoon
    • Black salt – 1 tablespoon
    • Red chilli powder – 1 teaspoon (optional)

Method

Raita masala:

1. Coarsely ground the cumin seeds.

2. Mix all the ingredients in a bowl.

3. Store in a refrigerator.

Raita:

4. Boil the grated lauki or kachcha papita.

5. Let it cool down.

6. Add sugar and 1–2 tablespoons of water to curd.

7. Churn the mixture.

8. Add the boiled lauki or kachcha papita to the churned mixture.

9. Mix all.

10. Garnish with coriander leaves.

11. Refrigerate.
